Chicken, Pesto & Cheese Panini
Ingredients:
1 Ciabatta bread
Cheese
Chicken slices (or fillings of your own choice)
Pesto sauce
Sun-dried tomatoes
Butter
Firstly, cut your ciabatta bread down the middle into halves and butter it.
Place a frying pan on medium heat for around 2 minutes and the place your buttered slices face down in the pan.
(A tip to get golden toasted bread, place a place on top of your bread with a mug on top. Applied pressure gives the bread the desired look.)
Check the bread regularly with a spatula and remove it when you see your preferred color.
Add your cheese to one side and pesto sauce to the other side, place your sun-dried tomatoes on top of the cheese. Close the sandwich and place it back in the pan for 15 seconds to allow the cheese to melt.
cut it down the middle and voila!



Bangers, Mash n Gravy
Ingredients:
Chicken (or beef) gravy granules
Smash instant mash potato
Your favorite sausages
Firstly, place your sausages in a frying pan with a little oil, salt, and pepper. Turning the sausages regularly to ensure they cook evenly. These should take 15 minutes overall.
Boil the kettle and make your instant mash and gravy :)
(optional): Add some boiled broccoli and carrots to get some of your 5 a day for that day.
(I personally had a tin of beans that needed to go so I used them too.)

Spicy homemade chicken nuggets and chips
Ingredients:
Pre diced chicken breasts
Plain flour
Chilli Powder
Smoked paprika seasoning
Salt
Pepper
2 Eggs
Oven chips
Firstly, get 2 bowls and a plate. Mix your flour and other dry seasonings together into a bowl and place it to aside for now.
Get your 2 eggs and whisk them into your second bowl place that aside with your flour.
Place your oven chips in the oven for 18 minutes at 180°C and let's get to making your chicken nuggets.
Take your diced chicken and cover them in your whisked eggs, then into your flour mix, back to the egg and a final coat of flour. Repeat this with all the chicken.
Place a frying pan on a medium heat with enough oil to fry your chicken in. Allow the oil to heat up and then place your chicken dices into the oil. Turn the chicken every 1-2 minutes and remove the chicken from the oil once golden brown.
Remove your chips from the oven and there you have your homemade 'chicken n chips'.
