Vegetarian and Vegan Meals



Vegetarian sausage with mixed veg spaghetti
Ingredients:
Bell peppers
Linda McCartney veg sausages
Onion
Garlic
Italian seasoning
Salt
Pepper
Olive oil
Spaghetti
Tomato sauce
Firstly, Place your sausages in the oven at 180°C for 18 minutes.
Boil the kettle and start cooking your spaghetti on a medium heat simultaneously.
Next, you want to dice your peppers, onion, garlic and one tomato and place them into a stir fry pot with some oil and seasonings of your choice. Stir occasionally to ensure nothing burns
One your spaghetti is cooked, drain it and add it your vegetable mix and the tomato sauce and half a cup of the pasta water.
Remove the cooked sausages from the oven and cut them into bite sizes.
(optional) You can either add your sausages to your spaghetti mix or add it directly to your plate.

Salmon, rice and veg
Ingredients:
Salmon
Rice in a bag
Broccoli
Cucumber
Avocado
Barbs' lemon salmon sauce

Firstly, squeeze your lemon into a small bowl with your crushed garlic clove and Italian seasoning. Cover your salmon in your lemon garlic sauce then place it in the pan and bring the heat to a medium heat and cook each side (top, bottom and sides) for around 2 minuets each.
Rice in a bag takes around 10 minuets to cook and so does boiling the broccoli.
While the rest is boiling, begin cutting you avocado and setting up your plate.
Once everything is cooked, plate it up in an aesthetically pleasing way and enjoy.
tip: to get as much flavour as possible, pour the oil/sauce left over in the pan onto your rice.
Crispy cheese corn filets*
Ingredients:
a cup of flour
1.5 cups of corn
half cup of shredded cheese
half cup of milk
2 whisked eggs
chilli powder
salt

1. Mix all the ingredients together in a large bowl.
2. heat up half a cup of oil in a skillet over a medium heat.
3. take a table spoon from the mixture and place it into the hot oil.
4. flip over when the sides start to brown or after a minute and half (whichever comes first)
5. once cooked, enjoy with mayo or a sour chive sauce.
